Slimming World Mince Pie – Low Syn – Christmas Recipe – 2017

In this episode I cook Slimming World Mince Pies!

I did weigh 26.7 stone now I weigh 15 stone and 13.5lbs, I am only 13.5 lbs away from my target!

Each Mince Pie is 4.5 syns

For the mince meat:
40g each of Pitted Prunes, Raisins, Sultanas and Goji Berries (I did not use Gojis)

Finely Grated zest and jiuse of 1/2 an Orange and Lemon
1/2 teaspoon of Mixed Spice and Ground Nutmeg
1 tablespoon of Brandy
2 teaspoons of Sweetner
2 small eating apples

For the pastry cases:
225g short crust pastry
1 teaspoon of flour (for dusting onto table)
low-cal spray

For Macaroon:
2 large egg whites
25 g of caster sugar and ground almonds
2 teaspoons of sweetner

Instructions:
Cut prunes into size of raisins and sultanas
Put fruit into pan with zest and juice with spices, brandy and sweetener. Stir for minutes of until the juices have been absorbed by the fruit. Cover and set for and hour to cool.

Peel, quarter and core apples and coarsely grate apple and stir them into to fruit.

Pre Heat oven to 190 fan 170 gas 5. Measure 35cm x 35cm pastry and roll out. Cut into 24 round disks.

Spray 2 x 12 bun tins with frylight and press pastry into them. bake for 15 minutes.

Macaroon:

Whisk egg whites in a clean bowl until soft peaks form, then gradually whisk in sugar sweetener and almonds.

Pipe or spoon 1 headed tablespoon of Macaroon into the pastry spread if you want too. Then bake for another 10 minutes.

Keep in tins for 5 minutes then place on wire rack until cool. Store in airtight tin.
