ENGLISH MADELEINES – EASY CHRISTMAS RECIPE
English Madeleines are the perfect Christmas treat! These are completely different than the French Madeleines which is a sponge cake baked in a shall shaped tin however; an English Madeleine has not been fully discovered in the baking world yet, it’s simply not trending. On the other hand, the recipe consists of a sponge cake baked in a dariole mould, brushed with jam and coated with coconut. My mum use to make this recipe when she was young and these madeleines are incredible delicious and a perfect complement at your next Christmas party or centerpiece! The jam and coconut gives these madeleines a distinctive Christmas look to them!
You can buy the dariole molds online, most commonly on websites such as Ebay or Amazon. Alternatively, you can use a large 6 hole muffin tin.
English madeleines are similar to the popular Australian cake – Lamingtons (or Leamingtons in Mauritian), which is baked in squares.
